This meal has been an unexpected success!
Usually when you make a meal prep, you have an idea of how good it will be, but with this meal… it was more of a last minute (we don’t want to spend much time) kinda thing.
But, it turned out to be a really amazing tasting meal!
The reason it’s called The “BIG” Mexican Bowl is because this is a HUGE meal! In fact, you could easily split this in half to make it a little more normal sized. Most people don’t need 1300 calories at a serving. 🙂
The BIG Mexican Bowl Grocery List for 2 people (who eat a lot)
- 3 pounds of Trader Joe’s ground chicken
- 2 cans of black beans
- 5 avocados
- 16 ounces Wisconsin sharp cheddar cheese
- 2 packs of Frontera Chicken Taco Skillet Sauce
- 10 cups of white rice
- Trader Joe’s Sour Cream
- Trader Joe’s Salsa Especial
COOKING INSTRUCTIONS
- Cook the ground chicken in a skillet over medium heat
- Once the chicken is cooked, add the beans and Mexican seasoning
- Continue letting is simmer for about 5 more minutes to decrease the liquid
- We stored this mixture in one large glass dish in the fridge, and served it each night
- The avocados, cheese, and rice were made each night for freshness. Prep took about 15 minutes while the rice cooked in the Instant Pot
SERVING INSTRUCTIONS
- Cook rice in rice cooker or Instant Pot (this is what we use)
- Add 1/10 of meat mixture to a large bowl
- Chop up 1/2 an avocado, and add to meat bowl
- Grade 1/2 cup of cheese, and add to meat bowl
- Add cooked rice to meat bowl, and stir it all together (this is the important part)
- Enjoy!
