Meal Prep: Hatch Chili Slow Cooker Pork

Well, today we have a very good smelling Hatch Chili Slow Cooker Pork.
I don’t know if it’s good yet, because we’ve never tried it.

Hatch Chili Slow Cooker Pork – Dinner
The idea behind this was to create a burrito bowl type dish.
In our household we love us some Chipotle (or Whole Foods) burrito bowls.
INGREDIENTS
4.5 pound pork shoulder from local butcher
2 jars Trader Joe’s Hatch Green Chili Salsa
2 red bell peppers
1 yellow bell pepper
1 yellow onion
1.5 cups white rice
1 can Trader Joe’s refried black beans
1 can Trader Joe’s refried pinto beans
2 cans Trader Joe’s pinto beans
Salt, pepper, and cumin to taste
COOKING INSTRUCTIONS
Slow cook the pork shoulder with 1 jar of Hatch Green Chili Salsa.
When cooked, add 2nd jar of Hatch Green Chili Salsa, and pull apart the pork.
Cool rice in rice cooker.
Sautee the peppers, onions, and 2 cans of pinto beans.
Add salt, pepper, and cumin.
SERVING INSTRUCTIONS
Layer the bowl or plate with refried beans.
Pile peppers, onions, and beans on top.
Pile meat on top of everything else.
