Chicken Apple Sauté
Holy moly has it been a LONG weekend! With a family emergency, and my the monthly real estate investing group that I run all happening this weekend, I feel like I could use a nap. 🙂
No worries, it’s all good in the hood, and we are still going to get our meal prep rocking!
If we didn’t spend the two hours that it takes to meal prep we’d spend far more in time and money during the week.
Not to mention we wouldn’t be able to share these delicious meals with you.
This Meal Prep Sunday we have a Chicken Apple Sauté that includes Brussels sprouts and multi-colored sweet potatoes. Yum!!! Or nom, nom! Whichever term you prefer.
And we are going back to my all time favorite… the Buffalo Chicken Sweet Potato meal prep. I think about this meal during the week like it’s a cheat meal. Mmmmm!
Chicken Apple Sauté – Lunch
We’ve made something similar to this in the past, but this week Emily is trying her hand at making it better by creating the recipe through intuition, and a little sweat.
INGREDIENTS
3 pounds of organic Trader Joe’s chicken breasts
2 bags of Trader Joe’s Brussels sprouts
1 bag of Trader Joe’s sweet potatoes
1 cup of chicken broth
.5 chopped yellow onion
3 small granny smith apples
2 tablespoons of cinnamon
2 teaspoons of nutmeg
Salt & pepper to taste
COOKING INSTRUCTIONS
Dice sweet potatoes
Cut Brussel sprouts in half
Drizzle with olive oil & add salt and pepper
Bake for around 50 minutes at 400 degrees
While baking
Saute the diced onion on the stovetop
Add shredded chicken and chicken broth to the onions
Cook until chicken is cooked FULLY
Add chopped apple to chicken and onions
Let cook until the apples are soft, and the chicken broth has cooked off
Mix the chicken concoction with the sweet potatoes and Brussels sprouts
Mix in cinnamon and nutmeg
