After a long weekend of relaxing we are getting to making our Crockpot Chicken Curry & Curry Chicken Salad a little later than usual on this Sunday evening, but gotta get it done.
If you haven’t tried meal prepping yet… It is SO worth it! Meaning it will improve your coming week, so much that even when we don’t feel like spending the 1-2 hours doing it on a Sunday night, we just dig deep, and get it done.
This week we are utilizing the Crockpot, which is nothing new, but we are creating a homemade Crockpot Chicken Curry dish that is getting created as we go, or I should say as Emily goes, and I type this up.
Our second dish (AKA lunch) will be the tried and true Curry Chicken Salad, which we’ve made several time, but haven’t posted to the Meal Prep Sunday blog.
Crockpot Chicken Curry
With all of the healthy curry recipes being made lately, Emily is really getting the hang of using these ingredients, and testing out new coconut based options.
This is one of her new creations…
INGREDIENTS
3 pounds of organic Trader Joe’s chicken breasts
1 package of organic cremini mushrooms from Trader Joe’s
1 red pepper
1 yellow onion
3 tablespoons of curry powder
2 cans of Trader Joe’s coconut milk
1.5 cups of raw Trader Joe’s cashews
1 bag of Trader Joe’s sweet potatoes (16 ounces)
COOKING INSTRUCTIONS
Chop all of the veggies, and add to Crockpot with whole chicken breasts.
Blend coconut milk, cashews, and curry powder in food processor.
Pour blended mix on top of Crockpot mixture.
Chop sweet potatoes, and set aside.
Cook Crockpot on low for 3 hours.
Add sweet potatoes, and cook for about another hour, or until chicken is fully cooked.

Curry Chicken Salad
This is a really great cold Curry Chicken Salad that has a very fresh taste to it. We’ve made it 3 or 4 times, so you know that it’s a winner.
INGREDIENTS
3 pounds of Trader Joe’s organic chicken breast
0.50 cup(s) Just mayo
0.50 onion (medium), Onion
0.33 container Trader Joe’s shredded carrots
2 cup red grapes
3 tbsp(s) curry powder
0.50 cup Trader Joe’s raw cashews
COOKING INSTRUCTIONS
Cook chicken on the stove top until fully cooked.
Chop up the onion, and add to a large bowl.
Slice grapes in half, and add to same bowl.
Add carrots, and curry powder to bowl.
Toast cashews on stovetop, just until lightly browned. Add to bowl.
Shred chicken, and add to the bowl.
Add may to the bowl and mix it all up!

The taste report
This guy is very good, and extra very good if you’re looking for low carbs. We will usually eat a bowl of old fashioned oatmeal with this concoction to get our carbs up a little higher.
