Roasted Chicken & Beet Salad / Salsa Verde Chicken (modified)
Salsa Verde Chicken – Dinner
This is a dish that we introduces a few months back that comes from the Just Jessie B blog. It’s an excellent meal, and this week we’ve decided to modify it by adding a few different kinds of beans.
The reason for this addition is simply to get a little more fiber into the meal, and the beans should do it!
INGREDIENTS
* 12 oz tomatillo salsa (aka “salsa verde”)
* 1 cup raw cashew pieces from Trader Joe’s
* 1 cup coconut milk from Trader Joe’s
* 1 tsp salt
* 1 tsp pepper
* 1 tsp cumin
* 1 tsp garlic powder
* Juice of 1/2 lemon
* 3 pounds organic chicken from Trader Joe’s
* Fresh chopped cilantro, for garnish
* 1 can of Trader Joe’s organic Great Northern Beans
* 1 can of Trader Joe’s White Kidney Beans
* These beans are not in the original recipe, but are one of my super foods (according to InsideTracker)

Roasted Chicken & Beet Salad – Lunch
This is basically a super food salad. You’ve got the protein from the chicken, fiberious veggies gallor, and low glycemic carbs from the sweet potatos.
INGREDIENTS
3 pounds of organic Trader Joe’s chicken breasts
1 bag of Trader Joe’s sweet potatoes
2 packages of Trader Joe’s beets
2 bags of Trader Joe’s Brussels sprouts
1 large head of broccoli
1 tablespoon of olive oil
1 tablespoon minced garlic
COOKING INSTRUCTIONS
* Beets, broccoli, and onions, then bake in the oven at 425 degrees for 20 minutes.
* Chop Brussels sprouts, and bake in oven at 425 degrees for 20 mins.
* Chop sweet potatoes, and bake in oven at 425 degrees until soft.
* Note: you can try to cook the veggies together, but we’ve found that the sweet potatoes can take so much longer to cook that they are better cooked separately if you have the time.
* Put some garlic and olive oil in a stovetop pan.
* Add sliced chicken to cook.
* Season chicken with 3 teaspoons of salt, 2 tablespoons of turmeric, 1 tablespoon of ground ginger, and 3 teaspoons of black pepper.
* Cook until the chicken is totally cooked.
