Someone asked me yesterday, how will you keep you routine while you’re on vacation…
My response: We will go to Trader Joe’s, buy our groceries, and meal prep our food.
Their response: wow.
Haha!
We didn’t see any reason to not do our meal prepping while we’re vacationing in Arizona. They have the same stores here, and we have cooking equipment.
So, just to fill you in, we are in Phoenix Arizona as I write this, and as we meal prepped this week.

Slow Cooker Salsa Verde Chicken – Dinner
This Slow Cooker Salsa Verde Chicken is super easy to make, very healthy, and tastes great! You can even add some rice if you need more carbs (not included in nutrition facts).
INGREDIENTS
* 3 pounds of organic Trader Joe’s chicken breasts
* 2 containers of Trader Joe’s tomatillo salsa
* 2 cans of pinto beans
* 1 can of white kidney beans
* 1 bag of spinach
* 1 cup of coconut milk
* 1 cup of cashews
* Salt
* Pepper
COOKING INSTRUCTIONS
Add chicken, salt, pepper, and tomatillo salsa to slow cooker/Crockpot
Cook on low for 3’ish hours
Blend cashews and coconut milk until smooth
Add blended goodness to slow cooker
Add all cans of beans to the slow cooker
Cook everything in slow cooker for another 30 minutes
Serve over spinach (or rice if you need more carbs)

I really love the spiciness in this meal! And the beans, with the sauce, and the spinach are just great for keeping me feel full.
Alfredo Chicken & Broccoli
This is originally from Just Jessie B, and our modified version with all cooking instructions can be found here.
We haven’t tried this one before, but we’ll give you a full report once it has hit our mouths. 🙂
INGREDIENTS
* 1.5 pounds of organic Trader Joe’s chicken breast
* 1 large head of broccoli
* 1 Tbsp olive oil, for drizzling
* 1 container parmesan cheese
Sauce
* .5 cup raw cashews
* .5cup coconut milk
* .5 cupwater
* .5 of a white onion, minced
* 3 tsp minced garlic
* 1 tbsp olive oil
* 1.5 tsp Italian seasoning,
* 1.5 tsp salt
* 1.5 tsp pepper
COOKING INSTRUCTIONS
- Bake chicken for 15 minutes at 400 degrees seasoned with salt and pepper
- Blend all sauce ingredients until the sauce is nice an smooth
- At the 15 minute mark, remove the chicken from the oven, and add chopped broccoli
- Pour sauce over the chicken and broccoli
- Continue baking for 15 minutes (or until chicken is fully cooked)
- Broil for about 5 minutes to brown things up
- Sprinkle parmesan cheese over everything!
