When you’re working on accomplishing a big goal there will be set backs. As much as you want to see results every week, sometimes there are reversions to the mean. This week Beth didn’t have any pounds lost, but what can’t be ignored is progress in other areas. Other areas of progress are: strength (physical and mental), endurance, knowledge, muscle gained (it’s possible that muscle gain was equal to fat loss), and stress reduction. I think the biggest area of gain is the knowledge. The knowledge that Beth can share with others about the hard weeks, and how to overcome them. Beth continues to be a complete rock star, and crush her workouts, and meal plan.

Meals from last week
Beth and I talked about the added grains to her diet this week (non-Paleo). The consensus was that she didn’t realize she was doing anything wrong. You would think that whole wheat is healthy, right? I would have thought that too before I found Paleo, and cut out whole wheat altogether. The media really drives home that whole wheat is good for you, but this couldn’t be farther from the truth. It’s just big business trying to sell. You really can’t blame them. Try cutting your grains out for a month, and see how you feel… My energy spiked!

2 eggs scrambled, white onion, spinach, vegan cheese, garlic in a whole wheat tortilla soft shell.
Taco – ground chicken with taco seasoning, white onion, tomato, shredded cheese in a whole wheat taco shell – had 3 for dinner.
2 eggs scrambled, mushrooms, trader joes deli ham 1 slice, 1/2 whole wheat bagel with organic butter, cup of coffee.
Spring mix salad, white onion, 2 boiled eggs, little bit of vegan cheese, slivered almonds, tablespoon of organic ceasar salad, cup of water.
Homemade Kale soup made by Neal – kale, carrots, onions, celery, spicy sausage, organic chicken broth.
Piece of steak, broccoli, cup of water.
Grilled chicken & broccoli and shredded cheese whole wheat quesadillas, broccoli, sweat potato tator tots.
Banana, apple, shredded wheat, coffee, water.
2 hard boiled eggs, 1 slice trader joes rosemary ham, teaspoon mayo, water.
Greek salad and greek salad dressing from pizza shop.
2 organic eggs, mushrooms, broccoli, grilled chicken, sweat potato tator tots.
