Notes: This is the first time that I’ve had a fajita seasoning that wasn’t pre packaged. And it turned out really good. You can top these with sour cream or cheese if you’re into that.
Grain free fudgy brownies

Notes: If you like cake watch out. These are more like a cake than a brownie, but they are amazing! I don’t like sweets, and this is the perfect balance of taste and texture. The “frosting” is really the winner in this “brownie”. This is definitely a cheat day food.
Egg frittata
14 farm fresh eggs
6 cups spinach
1/2 pound pork pan sausage
Directions: Cook sausage in pan on medium/high. Once it’s cooked add spinach, and cook down spinach. Add mixture to casserole dish. Whip 14 eggs until frothy. Add to casserole dish. Bake for 25-30 mins.
Notes: We still aren’t tired of these. They are just so good, and easy to take on the go.
