Another week, another 5 days of delicious food!
This week we are going to a way back throwback by making BBQ Chicken with Robin’s Spicy Coleslaw on the side. Then our dinner is somethign we have never tried, but who doesn’t like a cheesy Cheddar Broccoli & Chicken Bake…?
Here we go…
BBQ Chicken Slaw
Like I mentioned above, we have done this meal prep before, but it was probably over a year ago. But, back in the day it was in our regular rotation.
If you like spicy coleslaw, this is quite amazing! And the BBQ sauce that we found is made by one of our favorite BBQ places in Seattle called The Boar’s Nest (in Ballard).
INGREDIENTS
Robin’s Cabbage Slaw
- 2 packs of Trader Joe’s Organic Shredded Green & Red Cabbage with Orange Carrots
- 1/2 cup Just Mayo
- Thinly sliced Walla Walla onion
- 1 tbsp lemon grass paste (found at Safeway)
- 1 tbsp ginger paste (found at Safeway)
- Chopped cilantro
- 1 tbsp Sriracha
- 1/4 cup seasoned rice vinegar
- Optional: Add thinly sliced jalapeño
BBQ Chicken
- 1 bottle of Boar’s Nest BBQ sauce (found at PCC)
- 3 pounds of Trader Joe’s organic chicken breast
- 1 cup chicken stock
COOKING INSTRUCTIONS
Robin’s Slaw
With Robin’s Slaw you might have to chop the cabbage up a bit, but otherwise, just mix everything together. Also, feel free to add more of less of our ingredients to hit your desired taste.
BBQ Chicken
This is a Crockpot meal, which is always the way to go. Just add the chicken to the Crockpot for a quick cook with a cup of chicken stock, and a little salt & pepper.
Once it’s all cooked, shred the chicken, and add the Boar’s Nest BBQ sauce. Done!
From there, simply add to individual glass wear.
