Oatmeal Cottage Cheese Pancakes!

Oatmeal, cottage cheese pancakes! -4 eggs whites -1/2 cup oatmeal, cinnamon -1/4 cup cottage cheese -1/2 scoop vanilla protein powder (I added a whole scoop :-)) Blend to mix. Cook like pancake. Top with crushed berries and pecans. Yum!

Now that the long race is over it’s time to start gaining back some muscle. This is the first week in months that I’ll be working out with weights at least 4 days. My body is a little sore, but it feels great! I’m starting off in straight hypertrophy. 8-12 reps, 3 sets, 3-4 exercises. […]

I went for my first post race run yesterday. It was a leisurely 4-5 mile road run. My soreness was completely gone, but my body still felt tired once I started running. I plan on doing another short run on Friday followed by a trail run on Sunday.
